Make sure you have bothe the intake and exhaust machines to be sure they are flat.

Unless you want to build a 390, 410 (w/ a 428 crank) or 445 stroker, skip tge 360. I love the FE and they can run really smooth. But a stock 360 has such low cr I would run the 302... You have it. At a minimum you, may need to ad a proportioning valve on the rear breaks to be sure the that you can fine tune the rear pressure down to avoid the back end padding the front end in a panic stop. I say given those choices, the 390. So easy to go up to a 416 CID or even a 445 CID later. Sure i kept the 240 in my truck because i decided to keep this one original, but my last ride had a 416, and i loved it. I think he car big block overdrive is a T85/R11 and the truck overdrive is a T89/R11 with the u-joint bolted to the trans.
Maybe slightly lower first gear in the truck model, not sure. I may be mistaken.

Update More 240 improvements!
Just wanted to give an update in the trusty ol' 240 that is in my truck. (Since the 240 Option is winning, I thought i would try to make it run better, and it is.) So far i fixed a couple vacuum leaks, Rebuilt the C4 trans (last summer), rebuilt the stock 1940 Holley (but i think i have a minor leak...

Later model steelies from ford or dodge will work with disks. I got dodge wheels from an 80's ram truck.

I like the 60's Autolite 2100's. Readily available, good on gas, easy to work on. But what you have should work also if clean and rebuilt.
Unless you go 4v, then an 400 or 500 CFM autolite 4100 is good. 1.08 diameter should be fine.
